Healthy Pumpkin and Applesauce Muffins
Ingredients
- 1 cup large flake oats
- 1/2 cup unsweetened applesauce
- 1/2 cup canned pumpkin
- 2 large eggs, lightly beaten
- 2 Tbsp + 1 tsp coconut oil
- 1 Tbsp double-acting baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp pumpkin spice
- 1/2 cup almond milk (you can use milk if you want)
- 1/2 cup coconut flour
- 1/4 cup whole wheat flour
- 1/4 cup coconut crystals (less healthy option is brown sugar)
Instructions
1. Preheat oven to 375, line pan with liners or grease pan with oil (I used coconut oil)
2. Combine oatmeal, pumpkin, applesauce, almond milk, eggs and oil. Mix until all ingredients are blended
3. Measure and mix all dry ingredients. Make a well in the center and pour wet ingredients into dry. Mix until dry ingredients are just moistened. Fill muffins cups 2/3 full. Bake 15 – 20 minutes or until lightly browned on top.
Makes 12 muffins.
