Healthy Chocolate Chip Zucchini Bread

I got a bit adventurous today and decided to do some baking.  My mom dropped me off a GIANT zucchini that she grew in her garden and so I decided it was time for some zucchini bread!

I thought it should be a healthy version and John thought that it needed to have chocolate chips….so as it turned out, I created what I’ll call a 'sort of' healthy chocolate chip zucchini bread.


Here’s the recipe if you want to give it a try:


To make it healthier, I substituted coconut oil for vegetable oil. (I had to melt it to mix it in as it’s solid at room temperature).  I also substituted brown sugar for white sugar.  You could also use half apple sauce, half oil as a substitute for the oil.


All the Ingredients



  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 3 eggs
  • 2 cups brown sugar
  • 1 cup coconut oil
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped pecans
  • 1 cup semisweet chocolate chips



Preheat oven at 350 degrees F. Grease (2) 9 by 5-inch loaf pans.


Sift together flour, baking powder, salt, spices and baking soda.


In a large bowl, beat eggs until light and fluffy. Add sugar, and continue beating until well blended.


Stir in oil, vanilla, zucchini, pecans, and chocolate chips.


Stir in sifted ingredients. Pour into prepared loaf pans.


Yummy Batter           Ready to Go in the Oven


Bake for 50 minutes, or until a skewer inserted in the middle comes out clean.


Remove loaves from pans and cool. Chill before slicing.

We took a loaf with us to dinner at John’s Mom’s tonight and it got the thumbs up!


I thought it was pretty delicious too 🙂
